High Protein Cheese Burger Potato Bowls!

Tastes just like you’re eating a burger! One of the tastiest and easiest meal preps, high in protein and volume with low carbs and calories💪🏽🔥

Ingredients (To Make 4 Servings)

  1. 800g Raw Sweet Potatoes cut into small cubes
  2. 1 Tsp Salt
  3. 1 Tsp Black Pepper
  4. 1 Tsp Garlic Powder
  5. 1 Tsp Onion Powder
  6. 1 Tsp Smoked Paprika
  7. 2 Tsp Olive Oil
  8. 800g 5% Fat Ground Beef , or go for our Angus Burger Mince if you want it extra juicy!
  9. Season with Salt & Pepper on both sides
  10. 30g Light Butter (for cooking + extra once cooked)
  11. 80g Light Cheddar Cheese (use any cheese)

Special Sauce

  1. 100g Light Mayonnaise
  2. 80g Reduced Sugar Ketchup
  3. 20-30g Yellow Mustard
  4. 1 Tsp Onion Powder
  5. 1/2 Tsp Black Pepper
  6. 1/2 Tsp Smoked Paprika
  7. 15-20ml Pickle Juice

Pickle Salad

  1. 1 Whole Iceberg Lettuce thinly sliced
  2. 2 Medium Red Onion chopped
  3. 2 Large Tomatoes chopped
  4. 4-5 Medium Pickles chopped

Steps:

  1. Prepare and Cook the Sweet Potatoes:

  • Preheat your oven to 200°C/400°F.
  • Toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Spread the seasoned sweet potatoes on a sheet pan.
  • Oven bake or air fry for 25-30 minutes, until golden and crispy.
  1. Cook the Ground Beef:

  • Season the ground beef with salt and pepper.
  • In a pan, melt the butter and cook the beef until browned.
  • Once cooked, add more butter if desired, and sprinkle with shredded cheese to melt.
  1. Prepare the Special Sauce:

  • In a bowl, mix together light mayonnaise, reduced sugar ketchup, yellow mustard, onion powder, black pepper, smoked paprika, and pickle juice.
  • Adjust the flavour to your taste by adding more mustard or pickle juice if needed.
  • Bottle and store the sauce in the fridge until ready to serve.
  1. Make the Pickle Salad:

  • Slice the iceberg lettuce thinly.
  • In a separate bowl, mix the chopped red onion, tomatoes, and pickles.
  • Store the lettuce separately to prevent it from becoming soggy and combine just before serving.
  1. Final Assembly:

  • Reheat the cooked beef and crispy sweet potatoes together in a pan on low heat or air fryer for about 5 minutes.
  • Serve with the pickle salad on the side and drizzle with the special sauce.
