Filet Mignon - a well-known cut of steak, recognised for its tenderness and flavour. This steak is typically cut from the smaller end of the tenderloin muscle and is very lean. Filet Mignon is a boneless cut with a subtle beefy flavour and a little marbling. If you’re looking for a luxurious, tender steak that will melt in your mouth, the Filet Mignon is the one for you.
The Filet Mignon is also known as Tenderloin Steak, Beef Loin Steak, Filet, filet de boeuf and the Tournedos.
Ribeye Steak - If you’re looking for a very tender steak with beautiful marbling and full of flavour, the Ribeye cut may be the one for you. The ribeye is a popular option and is known for being a juicy cut full of intense beefy flavour. Ribeye steak is cut from the rib area of the cow and is perfect for grilling or pan-searing.
Ribeye steak isn't as tender as filet steak; however, the white fat cap and chew that come with ribeye steak make for a perfect combo. Ribeye steaks can either come boneless or with the rib bone attached. When the bone is still attached, it brings a unique flavour and can make the steak-eating experience much more fun.
The Ribeye Steak is also known as a Tomahawk Steak.
T-Bone Steak - This cut offers the best of both worlds: a New York strip and a soft, tender Filet Mignon, with a T-shaped bone between them. The T-bone steak is cut from the short loin. If you want to taste the softness of a fillet alongside the juiciness of a larger strip of the short loin.
Porterhouse Steak - The porterhouse is known as “the king of steaks”. It is similar to the T-Bone steak in cut, with notable differences. It includes a larger section of tenderloin and a larger piece of Filet Mignon. This steak has a rich, beefy flavour and is a large portion, perfect for a big appetite.
Sirloin Steak - Sirloin is cut from the large back muscle opposite the long, thin fillet steak. Sirloin steak is much bigger and beefier in flavour than fillet or rib-eye steaks. A nice balance between fat and yummy beef.
Tomahawk Steak - The Tomahawk is known for being richly marbled and perfectly tender, offering two distinct tasting experiences in one bite. Both the tender and lean flavours of a filet alongside the rich flavours of the strip. The Tomahawk comes from the rib section and comes on the bone, adding to the strong, beefy flavour.

Once you’ve chosen your preferred finish/doneness (e.g., medium rare or well done), make sure you cook your steak to the right temperature.
Many people mistakenly think the best way to judge a steak is by colour, but the reality is, judging colour is both subjective and a poor indicator of doneness. Bearing in mind that slightly pink or dark rosy colour means a different thing to each individual. Additionally, the myoglobin (the protein responsible for how the meat's red colour behaves) is also affected by external factors such as certain vegetables or nitrates.
As well as this, many websites tell you that the steaks' doneness is affected by the type of steak; the reality is that all steaks experience a certain level of doneness at the same temperature. This is because, on a scientific level, the doneness of the steak is based on how the proteins are affected by the thermal energy they’ve been exposed to.
The easiest way to get the finish just right is to check the temperature with a digital thermometer.

Rare: 48 - 51ºC
Medium Rare: 52 - 54ºC
Medium: 57 - 62ºC
Medium Well: 63 - 68ºC
Well Done: 68ºC+

Rest assured, all our products at Saffron Alley are Halal and meet our rigorous halal tayyib standards that adhere to Islamic Shariah guidance on how meat should be reared and slaughtered. This means that the animal must be raised safely and should have a high quality of life. The animals must be fed a vegetarian diet and must not be treated with any nasties such as growth hormones or antibiotics. When the animal is slaughtered, it must be cut at the jugular vein, carotid artery and windpipe. These rulings, among other criteria, mean our halal meat is classed as Tayyib, which also translates as pure.
