Ingredients:
- 1 chicken breast
- Fusilli pasta
- Olive oil
- Smoked paprika
- ½ onion chopped
- 2 garlic cloves chopped
- Tomato puree
- Chilli flakes (optional)
- Passata
- 100g sliced baby plum tomatoes
- Double cream
- Cheddar cheese
- Fresh basil
Method:
- Dice your chicken breast into smaller pieces, and cover them with 3tbsp olive oil and 4tbsp smoked paprika
- Heat up 2 tbsp olive oil in a pan
- Add ½ an onion and 2 garlic cloves all chopped and cook for 30 secs
- Mix in 1 tbsp tomato puree and 1 tsp chilli flakes
- Add the chicken and 3 tbsp passata
- Add the sliced tomatoes
- Let the chicken cook and start on your pasta
- Add 300ml double cream and 3 tbsp of the pasta water
- Stir and season with salt and pepper
- Mix in the pasta, with cheddar cheese and fresh basil
