Palestinian Lamb Maqluba Recipe🍉

We have in store a beautiful and flavourful Palestinian Maqluba Recipe🍉

The beauty and significance of sharing a meal with loved ones is an Eid tradition.

We want to make this Eid extra special and celebrate the Palestinian culture, paying homage to the resilience, authenticity and beauty of Palestinians.

Ingredients:

  • 0.5 kg Saffron Alley Halal Mixed Diced Lamb
  • 2 cups basmati rice
  • 1 large aubergine, sliced
  • 2 large potatoes, sliced
  • 2 large tomatoes, sliced
  • 1 large onion, sliced
  • 2 cups cauliflower florets
  • 4 cups lamb broth
  • 1 tsp ground cumin
  • 1 tsp ground allspice
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp ground black pepper
  • 2 tsp salt
  • 4 tbsp olive oil
  • Pine nuts and fresh parsley for garnish (optional)

Instructions:

  1. Cook Lamb: Simmer lamb pieces in water for 45 minutes. Remove lamb and strain broth.
  2. Fry Vegetables: Sprinkle eggplant with salt and pat dry. Fry aubergine, potatoes, and cauliflower in olive oil until golden. Drain on paper towels.
  3. Prepare Rice: Rinse and soak basmati rice for 20 minutes. Mix with cumin, allspice, turmeric, cinnamon, pepper, and 1 tsp salt.
  4. Layer Ingredients: In a pot, layer tomatoes, lamb, eggplant, potatoes, cauliflower, and rice. Pour in enough broth to cover the rice.
  5. Cook Maqluba: Boil, then simmer on low for 45 minutes until rice is cooked and liquid absorbed. Rest for 10 minutes.
  6. Serve: Invert onto a platter, garnish with pine nuts and parsley.
