Pistachio crusted Tandoori Lamb Chops

Enjoy the sun with a BBQ and make these delectable Pistachio Crusted Lamb Chops, filled with flavour and ready to make your tastebuds dance in delight.

Lamb Chops are always fantastic for a BBQ, they're [pretty simple to cook and don't require much time either, you can always marinate them beforehand and quickly cook them to your liking. If you're not much of a pistachio person, we recommend using our Ultimate BBQ Marinade Recipe instead, which will go with any cut of meat!

You can either make these in an oven or on the BBQ, the choice is yours, we'd however recommend using the BBQ for that extra flavour.

Marinade:

  • 500g Grass-fed Lamb Chops
  • 2 tsp Ground Cumin
  • 2 tsp Ground Coriander
  • 1 tbsp Tandoori Powder
  • 1 tsp Garam Masala
  • 1/2 tsp Chili Powder / Chili Flakes
  • 1/2 tsp Turmeric
  • 1/2 tsp Ground Black Pepper
  • 2 tsp Ginger Garlic Paste
  • Juice of 1 lemon
  • 2 tbsp Natural Yogurt
  • 2 tsp Olive Oil
  • 1 1/2 tbsp Tamarind Paste/Sauce
  • 1 1/2 tsp Salt

For the crust:

  • 1 Egg White
  • Chopped Pistachios
Steps:
  1.  Combine all the ingredients together and leave to marinate for 2 hrs or overnight
  2. If your chops have a fat cap like mine, sear the fat cap till golden brown.
  3.  Align the chops either on a lined baking tray, or on a BBQ to sear for a couple minutes before flipping and cooking the side side for another couple minutes. The timing depends on how thick/thin your chops are and to your preference of doneness.
  4. Then brushed over some egg whites and sprinkle on your chopped pistachios and sear until a golden crust has formed and they are 55-57 degrees for medium rare.
  5. Now plate up and enjoy a meal that will taste incredible and benefit your health!
