So I'm sure we've all gathered that it is definitely too hot to cook, so why not make something that requires minimal stove hovering! The worst thing to do in the heat is to stand in front of a hot stove, stirring away in this humid heat!
Lucky for you, we have just the recipe, it's healthy, tasty and summer friendly. You can meal prep these, or simply make them for yourself, friends and family- not to mention they are the perfect BBQ addition.
Thankfully for you, this recipe requires zero stove cooking! All you need is an oven, so prep your meat and hide away behind the curtains to cool down.
Ingredients:
- 0.5 kg Saffron Alley skinless, boneless, Chicken Thighs
- Olive oil
- Lemon Juice
- 1 tsp Lebanese Shawarma Spice Mix
- 1 tsp Paprika
- 0.5-1 tsp crushed Chilli Flakes
- 1 tsp Cumin Powder
- 1 tbs Ginger/Garlic Paste
- 0.5 tbsp Salt
- Middle Eastern Pita Bread (used for Shawarma)
- Shredded Lettuce
- Sliced Tomatoes and Cucumbers
- Pickled Turnips (optional)
- Pickled Gherkins (chopped into strips)
Sauce:
- Yoghurt
- Pinch of Salt
- Pinch of Chilli Powder
- 1 tsp Garlic Powder
- A splash of freshly squeezed Lemon Juice
Steps:
- Marinate your chicken thighs with the above mentioned spices, lemon juice, oil, garlic paste and ginger paste (for a few hours if possible)
- Place in a preheated oven at 180 degrees for around 20 mins. Flip over halfway through
- Slice up, wrap it up, serve and enjoy!
