Fillet Mignon is one of the most prized cuts due to it mouthwatering texture it high in Demand & has extremely limited availability. This is because its an extremely tender steak with great flavour. Its taken from the short loin tucked under the cow's ribs & next to the back bone, this has extremely limited supply as it comes from a relatively small muscle which only produces a small amount of meat per animal.

Steaks can be cut ~8oz (230g) as standard however we would recommend our large piece sizes for roasts, Wellingtons or the master chef who wants to cut at home.
