Chicken Gizzard
Description
An offal cut that rewards a bit of effort. Chicken gizzards are lean, mildly flavoured, and take well to a long simmer or a quick, hot fry once cleaned and trimmed. Popular braised in a stew, added to fried rice, or marinated and grilled on skewers. Slightly chewy by nature, so low and slow or thin slicing both work well. No Shortcuts.
