This is not supermarket halal. This chicken was raised on open pasture in Berkshire by a farm that practices regenerative farming the way it was meant to be done - no gimmicks, no chickens with technical "access" to outdoors that never actually leave a barn. From the moment they are fully feathered, these birds live outside around the clock, on fresh ground, in fresh air. Fed from the land. Grown at nature's pace. Prepared to the Saffron Tayyib Standard from first day to final cut. There are 100 available this week. There will be 100 next week. That number is not a limitation. It is the standard holding its ground.

Our partner farm raises birds in a traditional manner, unlike the industry’s shift decades ago. Chicks are kept in a brooder barn for the first four weeks, warm and protected, allowing their feathers to fully develop before moving outside permanently. Mobile pens are moved to fresh pasture daily, providing clean ground, open air, and natural forage throughout their lives.Their diet consists mainly of grass, bugs, worms, and natural forage, supplemented with organic wheat and maize for gradual energy release.
The Hubbard breed, raised on the farm, is slower-growing and naturally robust. This slow growth ensures that their organs, muscles, joints, and immune system develop in proportion to their body, resulting in a resilient bird without antibiotics or hormones.
We sought a farm that meets the Saffron Tayyib Standard at every stage, and this is the farm that meets it.
Why only 100?
Pasture-raised, Tayyib-standard chicken can’t be produced at scale without the standard collapsing. Our partner farm moves their birds to fresh pasture daily using mobile pens, which is more labour and land-intensive and incompatible with volume farming. The Hubbard breed grows slowly by design, and the land needs time to regenerate. Every one of these things has a natural ceiling, and we’ve never tried to push past it. We rear exactly 100 birds to this standard for Saffron Alley customers each week, and the allocation doesn’t grow or the standard doesn’t bend.
